Peanut Butter Chocolate Chip Cookies

When I first saw this recipe I was quite intrigued as it does not require flour and it only calls for 5 ingredients. Since these cookies seemed so simple to make, I decided to whip some up as a yummy Saturday afternoon snack. I was pleasantly surprised by their taste and texture-- for these cookies to be so simple they were so yummy! Since they are so easy to make I decided to make a quick batch to include in the baked gift packages I was sending to some people. Russell likes these cookies so much, I made them while he was at work so he wouldn’t be able to eat them all...Perhaps I should make him his own batch soon :)

Ingredients:
  • 1 cup of your favorite peanut butter
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp. baking soda
  • 1 cup milk chocolate chips
Directions:

Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.

Combine all ingredients and bake for approximately 10-12 minutes. Move to a wire rack and let cool. Enjoy!

(makes approximately one dozen cookies)
